Mango Lassi
In the summer of
2010, I was in kind of a frenzy trying to gather all my documents and apply for
a student visa (I’m glad that headache is over). The only visa office in
Alberta is in Edmonton, so in July I went up for a long weekend – I had to go
to my Border Agency appointment, but I also wanted to visit my brother and his
girlfriend. After getting my appointment over with, it turned out to be one of the best weekends ever – Chai lattes (and bumping into an old friend) at Remedy,
seeing the Escher exhibit at the AGA, getting to meet the band at a Wolf Parade
concert with my friends Jenna and Jesse. Such is the sweet stuff of summer.
On the Friday,
my brother and I went to A Taste of Edmonton in Churchill Square to get
some sample-sized lunch. The only thing I remember having – because of its pure
summertime deliciousness – was a mango lassi. I can’t even remember what
restaurant stall it came from. I just remember sitting in the sun sharing a
little cup of mango-y goodness with my brother.
I think that
weekend played a big part in my decision to move here – and now I really,
really can’t wait for summer.
Mango Lassi
Adapted from Jamie Oliver’s recipe
Serves 1-2
Ingredients
½ cup plain yogurt
¼ cup milk
1 ripe mango, peeled and cut into chunks
1-2 tablespoons honey, to taste
Ground cardamom, to taste (optional)
Put all
the ingredients into a blender and blend until smooth. Sprinkle with cardamom
or a squeeze of lime juice.
