Incredibly Chewy Maple French Toast Cookies

 
Allow me to introduce Attempt #2 in my quest for a copycat of Bloom Cookie Co.'s maple french toast cookie. Damn you, Bloom, for making your cookies so unattainably delicious! (But please don't stop whatever you're doing. It's amazing).

I decided to try my hand at these again (attempt #1 can be found here) because I bought a package of maple french toast Blooms at Remedy on Friday, and I remembered how crazy good they are. Plus it's March, which means it's sugaring off season down east, which means MAPLE TIME. AKA, the most wonderful time of the year.

Cinnamon Bun Bars (and New Beginnings)


I'm back! Sorry for the long hiatus. The past few months have been a whirlwind - from a conked-out oven and a pest infestation, to finding a new apartment (new oven, no pests), escaping to Cuba for a while, Christmas, et cetera, et cetera... it's been a crazy winter! But we're all moved in, the tumult has died down, and I've got a new Kitchenaid mixer and camera (squeeeee!!) so I have no good reason for not posting! I hope all of you had lovely holidays and are managing to stay cozy and warm, wherever you are.

Soft Maple Cinnamon Cookies


There are few things that smell better on a dreary October day than something cinnamony baking in the oven. Add maple to the mix and you'll have the most comforting aroma that ever wafted through a kitchen.

I have been trying to recreate a cookie that I bought from Bloom this summer - a soft, maple french toast flavoured treat. [Note: if you haven't had Bloom cookies yet, keep your eye out for them. They can be found at the City Market downtown and at all three Remedy locations. Their cookies are always soft, chewy, and totally addictive. If you can find the London Fog cookies, buy them and eat them before someone else does!]

Carrot Cake with Lime Mascarpone Icing


 
It was my mom's birthday this past weekend, and I wanted to bake her a cake. And, it being fall, I've had a craving for a spicy, hearty carrot cake with mile-high icing on top. Luckily, I had just the right amount of mascarpone and cream cheese left over from making nectarine & mascarpone tarts, so it worked out perfectly. There's something about the combination of warm spices, earthy carrots, and cool, silky cream cheese icing that's so comforting. It's one of the best parts of fall.
